Historical Villages of Portugal
"Recipes that Tell Stories" is not just a Gastronomic and Wine Charter, but a project characterised by multi-sectoriality and multidimensionality.
It is thus characterised by being a structuring initiative, activating a range of sectors of activity, closely related to the Green Deal (European Ecological Pact) and the national and regional smart specialisation strategy.
Knowing in advance the demands of such a challenging mission, we have brought together various skills and competences in a fusion of common, empirical and scientific knowledge, bringing into this process the communities of the Historical Villages of Portugal and different local and regional players, including the municipalities that make up the Network, the Coimbra School of Hospitality and Tourism and the Beira Interior Wine Commission.
It is an instrument that contributes to responsible tourism and, consequently, to sustainable development. It is a mechanism for preserving the memories, traditions and knowledge of a territory that generates distinctive tourist experiences and an opportunity for the future. It's a bridge between the meadow and the end consumer; it's undoubtedly a genuine contribution to generating differentiation in gastronomy tourism.
Once the recipes had been identified following interviews with the population of the 12 Historical Villages of Portugal (Almeida, Belmonte, Castelo Mendo, Castelo Novo, Castelo Rodrigo, Idanha-a-Velha, Linhares da Beira, Marialva, Monsanto, Piódão, Sortelha and Trancoso), training sessions were held with the Coimbra School of Hospitality and Tourism, in partnership with the Beira Interior Regional Wine Commission, for the hotel and restaurant sector in the territory of the Historical Villages of Portugal. Out of this process, 13 restaurants were trained to produce the Recipes that Tell Stories menus with the Aldeias Históricas de Portugal label:
